Ingredients
3 sweet potatoes, unpeeled and cut in 1/’2 inch slices
2 bunches scallions, sliced
6 slices bacon, cooked and crumbled
olive oil
salt
To make:
Toss sweet potatoes with olive oil and sprinkle with salt.
Bake sweet potatoes at 350 degrees for 45 minutes,
Immediately upon removing from the oven, sprinkle with sliced scallions.
Add crumbled bacon and toss.
Serve immediately.
